Description

A comforting bowl of Cheesy Beef Hamburger Potato Soup, combining ground beef, potatoes, and cheese into a delicious dish.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and brown for about 5-7 minutes, breaking it apart. Drain excess fat.
  2. Lower heat to medium, add diced onion, and cook for around 5 minutes until soft. Add minced garlic and cook for another minute.
  3. Add peeled and diced potatoes, stir, then pour in the chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  4. If desired, use an immersion blender for a creamier texture. Blend to your preference.
  5. Mix in the milk and heavy cream. Heat gently until it simmers, avoiding boiling.
  6. Stir in shredded cheddar cheese gradually until melted. Season with salt and pepper to taste and serve immediately.

Notes

For a creamier texture, consider blending part of the soup. Don’t overcook the potatoes to maintain their texture.
