- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and brown for about 5-7 minutes, breaking it apart. Drain excess fat.
- Lower heat to medium, add diced onion, and cook for around 5 minutes until soft. Add minced garlic and cook for another minute.
- Add peeled and diced potatoes, stir, then pour in the chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
- If desired, use an immersion blender for a creamier texture. Blend to your preference.
- Mix in the milk and heavy cream. Heat gently until it simmers, avoiding boiling.
- Stir in shredded cheddar cheese gradually until melted. Season with salt and pepper to taste and serve immediately.
Notes
For a creamier texture, consider blending part of the soup. Don’t overcook the potatoes to maintain their texture.
