- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk (warm)
- 1 1/2 cups freshly shredded sharp cheddar cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt to taste
- Pinch of cayenne (optional)
Instructions
- Melt butter in a saucepan over medium-low heat.
- Whisk in flour and cook for 1–2 minutes.
- Slowly whisk in warm milk and cook until thickened.
- Reduce heat and stir in shredded cheese gradually.
- Add seasonings and stir until smooth.
- Adjust consistency with milk if needed.
- Serve immediately over hot fries.
Notes
Use freshly shredded cheese for the best texture. Store any leftovers in an airtight container in the refrigerator for 3–4 days.
