- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup crushed pineapple, drained
- 1/2 cup dried cranberries, chopped
- 1 cup pecans, finely chopped
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese until smooth.
- Stir in the crushed pineapple and chopped cranberries. Season with salt and pepper to taste.
- Form the mixture into bite-sized balls.
- Roll each cheese ball in the chopped pecans until coated evenly.
- Place the cheese balls on a baking sheet and freeze for at least 30 minutes.
- Serve chilled as an appetizer.
