A quick and easy recipe for cheesy Cheddar Egg Quesadillas, perfect for breakfast, lunch, or dinner.

- 4 flour tortillas
- 1 cup sharp cheddar cheese, grated
- 4 large eggs
- 2 tablespoons milk
- Salt and pepper to taste
- Butter or oil for cooking
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
- Pour in the egg mixture and scramble the eggs until just set. Remove from the skillet and set aside.
- In the same skillet, place one tortilla and sprinkle half of the grated cheddar cheese on top.
- Add the scrambled eggs over the melted cheese, then top with remaining cheese and another tortilla.
- Cook until the bottom tortilla is golden brown, then flip to cook the other side until golden and cheese is melted.
- Remove from skillet, slice into wedges, and serve warm. Enjoy!
Notes
You can customize with vegetables or meats. Avoid overcooking the eggs for a fluffy texture.
