Description

A quick and easy recipe for cheesy Cheddar Egg Quesadillas, perfect for breakfast, lunch, or dinner.

Ingredients

Scale
  • 4 flour tortillas
  • 1 cup sharp cheddar cheese, grated
  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
  3. Pour in the egg mixture and scramble the eggs until just set. Remove from the skillet and set aside.
  4. In the same skillet, place one tortilla and sprinkle half of the grated cheddar cheese on top.
  5. Add the scrambled eggs over the melted cheese, then top with remaining cheese and another tortilla.
  6. Cook until the bottom tortilla is golden brown, then flip to cook the other side until golden and cheese is melted.
  7. Remove from skillet, slice into wedges, and serve warm. Enjoy!

Notes

You can customize with vegetables or meats. Avoid overcooking the eggs for a fluffy texture.
