Description

Ingredients

  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 1 cup finely shredded carrots

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine melted butter and brown sugar. Mix in the egg and vanilla extract until well blended.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Fold in the shredded carrots gently.
