- 1 cup light brown sugar, packed
- 1 large egg
- 1 tbsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp baking powder
- ¼ tsp salt
- 1 cup finely shredded carrots
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine melted butter and brown sugar. Mix in the egg and vanilla extract until well blended.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Fold in the shredded carrots gently.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing into bars and serving.
