Description

A warm and delicious carrot and celery soup packed with nutrients, perfect for a light meal or starter.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 3 sticks celery, finely diced
  • 5 medium carrots (280g / 10 oz), halved lengthwise and finely sliced
  • 4 cups (960ml) vegetable stock

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the finely diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add chopped celery and sliced carrots; cook for about 8-10 minutes until tender.
  5. Pour vegetable stock into the pot and bring to a gentle boil.
  6. Reduce heat and let it simmer for 20-25 minutes.
  7. Blend the soup until smooth, or to your desired consistency.
  8. Taste and season according to preference.
  9. Serve warm and enjoy!
