Ingredients

- 1 tbsp olive oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 3 sticks celery, finely diced
- 5 medium carrots (280g / 10 oz), halved lengthwise and finely sliced
- 4 cups (960ml) vegetable stock
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the finely diced onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add chopped celery and sliced carrots; cook for about 8-10 minutes until tender.
- Pour vegetable stock into the pot and bring to a gentle boil.
- Reduce heat and let it simmer for 20-25 minutes.
- Blend the soup until smooth, or to your desired consistency.
- Taste and season according to preference.
- Serve warm and enjoy!
