Description
Chewy apple cinnamon cookies drizzled with caramel. A cozy fall treat with crisp edges, soft centers, and a sweet finish.
Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup light brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup finely diced apple
1/2 cup melted soft caramels
Instructions
1. Preheat oven to 350°F (175°C). Line two baking sheets.
2. Whisk flour, baking soda, cinnamon, nutmeg, and salt.
3. Cream butter and sugars until fluffy, 2 minutes.
4. Beat in eggs and vanilla.
5. Stir in dry mixture until just combined.
6. Fold in diced apple.
7. Scoop dough balls, 2 inches apart, onto sheets.
8. Bake 10–12 minutes until edges golden.
9. Cool completely.
10. Melt caramels and drizzle over cookies.
Notes
Best apples: Honeycrisp, Fuji, or Granny Smith.
For thinner drizzle, add 1 teaspoon cream when melting caramels.
Freeze dough balls up to 3 months.
