Instructions

  1. Prepare Your Jars: Start by washing your jars in hot, soapy water. Rinse them well and keep them warm until you are ready to use them.
  2. Mix Strawberries and Sugar: In a large bowl, combine the sliced strawberries with the sugar. Mix gently and let them sit for about 10-15 minutes until the juices start to release.
  3. Combine Dry Ingredients: In a separate bowl, mix cornstarch, salt, and lemon juice.
  4. Combine Strawberry Mixture: Stir the dry mixture into the strawberries. Make sure everything is evenly coated.
  5. Cook the Mixture: Transfer the strawberry mixture to a large saucepan. Over medium heat, bring the mixture to a boil while stirring continuously. This process should take about 2-5 minutes until it thickens.
  6. Add Extract: Once thickened, remove the saucepan from heat. If you choose to use almond extract, add it at this stage.
  7. Fill Jars: Pour the hot strawberry filling into the prepared jars. Leave about 1/2-inch headspace at the top of each jar. Wipe the rims of the jars with a clean cloth to ensure a good seal.
  8. Seal Jars: Place the lids on the jars and screw the rings on until they are fingertip tight, but not too tight.
  9. Process in Water Bath: Process the jars in a boiling water bath for about 15-20 minutes. This step is essential for proper sealing and preserving the filling.
  10. Cool and Store: Carefully remove the jars from the water bath and let them cool completely on a clean kitchen towel or rack. After 12-24 hours, check the seals and store the sealed jars in a cool, dark place.
