Description

This campfire shrimp skillet Cracker Barrel recipe brings garlic butter shrimp, roasted vegetables, and smoky Southern flavor together in one easy skillet or foil pack meal.


Ingredients

1 lb large shrimp, peeled and deveined

1 cup baby potatoes, halved

1 cup corn kernels (fresh or frozen)

1 red bell pepper, chopped

1 small red onion, sliced

3 tbsp unsalted butter, melted

2 tsp garlic powder

1 tsp Old Bay seasoning

½ tsp smoked paprika

Salt and pepper to taste

Fresh parsley, for garnish

Lemon wedges, for serving


Instructions

1. Preheat oven to 425°F or grill to medium-high heat.

2. Toss potatoes, corn, peppers, and onion with half the butter, garlic, paprika, salt, and pepper.

3. Spread veggies in a cast iron skillet or foil pack and roast for 15 minutes.

4. Toss shrimp with remaining butter and Old Bay seasoning.

5. Add shrimp to the skillet or foil, stir gently, and roast another 10–12 minutes.

6. Garnish with parsley and lemon before serving.

Notes

Add Cajun seasoning or hot sauce for extra heat.

Serve over rice or with biscuits for a full meal.

Refrigerate leftovers for 3 days; reheat in a skillet.
