Description
A foil-wrapped chicken dinner inspired by Cracker Barrel’s seasonal favorite, packed with tender veggies, buttery broth, and smoky campfire seasoning.
Ingredients
1/2 whole chicken, bone-in
2 small red skin potatoes, halved
1 ear corn, cut into thirds
1/2 cup baby carrots
1/2 cup grape tomatoes
1/4 cup sliced onions
2 tbsp butter
1 tsp campfire seasoning (or smoked paprika + garlic + salt)
Heavy-duty aluminum foil
Instructions
1. Preheat oven to 350°F.
2. Cut a large sheet of heavy-duty foil and place chicken in the center.
3. Arrange potatoes, corn, carrots, tomatoes, and onions around the chicken.
4. Sprinkle seasoning evenly over all ingredients.
5. Place butter on top of chicken and vegetables.
6. Fold foil over and seal tightly to trap steam.
7. Bake for 1 hour 15 minutes, or until chicken reaches 165°F internally.
8. Carefully open foil (watch for steam) and serve with biscuits or corn muffins.
Notes
For a grill version, cook over indirect heat for about 1 hour, turning halfway.
Swap chicken for shrimp or beef for variation.
Serve with a fresh salad or pink lemonade for a complete summer meal.
