- 2 cups sushi rice
- 2 1/2 cups water
- 1/3 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 cup imitation crab meat, shredded
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 2 sheets nori (seaweed), cut into strips
- 2 tablespoons sesame seeds
- Soy sauce, for drizzling
- Pickled ginger, for serving (optional)
- Wasabi, for serving (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot. Cook according to the rice cooker’s instructions or bring to a boil, then lower the heat, cover, and simmer for about 20 minutes. Remove from heat and let it sit for 10 minutes.
- In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves.
- Transfer the cooked rice to a large bowl. Pour the vinegar mixture over the hot rice and gently fold it in with a spatula. Allow it to cool to room temperature.
- In serving bowls, add a portion of the seasoned sushi rice. Top with shredded imitation crab, avocado slices, cucumber, and nori strips.
- Sprinkle sesame seeds over the top and drizzle with soy sauce. Add pickled ginger and wasabi if desired. Enjoy your California Roll Sushi Bowls!
Notes
For best results, keep the sushi rice separate from the veggies and crab if storing leftovers.
