Satisfying and customizable sushi bowls filled with sushi rice, avocado, crab, and fresh vegetables.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1 cup imitation crab or cooked crab meat, shredded
- 2 tablespoons soy sauce
- 1 tablespoon sesame seeds
- 1 sheet nori, cut into strips
- Pickled ginger (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat and let it sit for 10 minutes.
- Whisk together rice vinegar, sugar, and salt until dissolved.
- Stir this mixture into the cooked rice.
- Divide the sushi rice among bowls.
- Top with avocado slices, cucumber, shredded crab, and nori strips.
- Drizzle with soy sauce and sprinkle sesame seeds on top. Serve with pickled ginger if desired.
Notes
Allow rice to rest after cooking for the best texture. Use fresh avocado just before serving to maintain its color.
