Description

A warm bowl of creamy, cheesy grits topped with spicy, seared shrimp, perfect for a quick and flavorful meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a pot, bring water or chicken broth to a boil. Stir in the grits and cook according to package instructions until creamy. Stir in cheese and butter, then season with salt and pepper.
  2. In a skillet, heat oil over medium heat. Toss shrimp with Cajun seasoning and add to the skillet. Cook until shrimp are pink and cooked through, about 3-5 minutes.
  3. To serve, place a large scoop of cheesy grits in a bowl, top with the spicy shrimp, and garnish with sliced green onions. Enjoy!

Notes

For a smoky flavor, use a little smoked paprika along with the Cajun seasoning. For a richer base, use chicken broth instead of water when cooking the grits.
