- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooked shrimp, chopped
- 2 tablespoons green onions, chopped
- Paprika for garnish
Instructions
- Hard boil the eggs: place them in a pot and cover with water. Bring to a boil, then remove from heat and cover for 12 minutes. Afterward, cool them in cold water and peel.
- Cut the eggs in half lengthwise and remove the yolks, placing them in a bowl.
- Mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, salt, and black pepper.
- Fold in the chopped shrimp and green onions.
- Spoon or pipe the mixture back into the egg whites.
- Sprinkle with paprika for garnish and serve.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Fill egg whites close to serving time for best freshness.
