Ingredients

  • 8 oz penne pasta
  • 12 oz Cajun sausage (Andouille or smoked), sliced
  • 1 cup bell peppers (mixed red and green), chopped
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add the sliced Cajun sausage and cook for 5-7 minutes until browned and slightly crispy.
  3. Add the chopped onion and bell peppers to the skillet and sauté for 5 minutes, or until softened.
  4. Stir in the minced garlic and cook for one minute until fragrant.
  5. Pour in the heavy cream and sprinkle with Cajun seasoning. Stir well and let simmer for 5 minutes until the sauce thickens slightly.
  6. Add the cooked penne pasta to the skillet and toss to coat the pasta with the creamy sauce.
