- 8 oz penne pasta
- 12 oz Cajun sausage (Andouille or smoked), sliced
- 1 cup bell peppers (mixed red and green), chopped
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 tsp Cajun seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the sliced Cajun sausage and cook for 5-7 minutes until browned and slightly crispy.
- Add the chopped onion and bell peppers to the skillet and sauté for 5 minutes, or until softened.
- Stir in the minced garlic and cook for one minute until fragrant.
- Pour in the heavy cream and sprinkle with Cajun seasoning. Stir well and let simmer for 5 minutes until the sauce thickens slightly.
- Add the cooked penne pasta to the skillet and toss to coat the pasta with the creamy sauce.
- Serve hot and enjoy.
Notes
For a healthier twist, consider using whole-wheat penne for additional fiber. Adjust spice levels as needed.
