- 1 lb Smoked Sausage, sliced
- 1 cup Rice
- 1 cup Bell Peppers, diced
- 2 tbsp Cajun Seasoning
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 cups Chicken Broth
- 2 tbsp Olive Oil
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic; sauté until softened, about 2-3 minutes.
- Add the sliced smoked sausage; cook until browned, stirring occasionally, for about 5-7 minutes.
- Stir in the diced bell peppers; cook for another 3-4 minutes until slightly softened.
- Pour in the rice, Cajun seasoning, and chicken broth; bring to a boil.
- Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Fluff the rice with a fork and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of chicken broth if needed.
