Description

A one-pot Cajun dish that combines smoked sausage, rice, and vibrant vegetables for a quick and flavorful meal.


Ingredients

  • 1 lb Smoked Sausage, sliced
  • 1 cup Rice
  • 1 cup Bell Peppers, diced
  • 2 tbsp Cajun Seasoning
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken Broth
  • 2 tbsp Olive Oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic; sauté until softened, about 2-3 minutes.
  3. Add the sliced smoked sausage; cook until browned, stirring occasionally, for about 5-7 minutes.
  4. Stir in the diced bell peppers; cook for another 3-4 minutes until slightly softened.
  5. Pour in the rice, Cajun seasoning, and chicken broth; bring to a boil.
  6. Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed all the liquid.
  7. Fluff the rice with a fork and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of chicken broth if needed.
