Description

A flavorful one-pot Cajun dish featuring sausage, bell peppers, and seasoned rice, perfect for busy weeknights.


Ingredients

  • 1 tablespoon butter (or ghee, or olive oil for dairy-free)
  • 1 (12 ounce) package kielbasa sausage, sliced
  • 2 bell peppers, diced (2 different colors for variety)
  • 3 green onions, sliced
  • 1 clove garlic, minced
  • 12 cups spinach, roughly torn or chopped
  • 4 tablespoons tomato paste
  • 1 cup chicken or vegetable broth
  • 1/21 teaspoon Cajun seasoning (3/4 tsp. is usually best)
  • 1/4 teaspoon salt (or to taste)
  • 3 cups cooked rice
  • 23 tablespoons chopped cilantro or parsley for garnish (optional)
  • Black pepper or hot sauce (to taste)

Instructions

  1. In a large skillet, warm the butter or oil over medium heat. Add the sliced sausage and cook for 8-10 minutes until browned and caramelized. Remove the sausage and set aside.
  2. Add the diced bell peppers to the skillet and cook for 4-5 minutes until crisp-tender. Cook longer for softer peppers, if desired.
  3. Add the green onions, garlic, and spinach. Cook for another 1-2 minutes until the spinach wilts and the garlic is fragrant. Remove and set aside.
  4. In the same pan, combine the tomato paste, broth, 1/2 teaspoon Cajun seasoning, and salt. Cook for 3-4 minutes until slightly thickened.
  5. Return the sausage and vegetable mixture to the skillet, add the cooked rice, and stir to combine. Cook for another 1-2 minutes to allow flavors to meld. Adjust seasoning with salt and pepper as needed. Garnish with cilantro or parsley.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat on stovetop or microwave, adding broth if needed.
