A flavorful one-pot Cajun dish featuring sausage, bell peppers, and seasoned rice, perfect for busy weeknights.

- 1 tablespoon butter (or ghee, or olive oil for dairy-free)
- 1 (12 ounce) package kielbasa sausage, sliced
- 2 bell peppers, diced (2 different colors for variety)
- 3 green onions, sliced
- 1 clove garlic, minced
- 1–2 cups spinach, roughly torn or chopped
- 4 tablespoons tomato paste
- 1 cup chicken or vegetable broth
- 1/2–1 teaspoon Cajun seasoning (3/4 tsp. is usually best)
- 1/4 teaspoon salt (or to taste)
- 3 cups cooked rice
- 2–3 tablespoons chopped cilantro or parsley for garnish (optional)
- Black pepper or hot sauce (to taste)
Instructions
- In a large skillet, warm the butter or oil over medium heat. Add the sliced sausage and cook for 8-10 minutes until browned and caramelized. Remove the sausage and set aside.
- Add the diced bell peppers to the skillet and cook for 4-5 minutes until crisp-tender. Cook longer for softer peppers, if desired.
- Add the green onions, garlic, and spinach. Cook for another 1-2 minutes until the spinach wilts and the garlic is fragrant. Remove and set aside.
- In the same pan, combine the tomato paste, broth, 1/2 teaspoon Cajun seasoning, and salt. Cook for 3-4 minutes until slightly thickened.
- Return the sausage and vegetable mixture to the skillet, add the cooked rice, and stir to combine. Cook for another 1-2 minutes to allow flavors to meld. Adjust seasoning with salt and pepper as needed. Garnish with cilantro or parsley.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat on stovetop or microwave, adding broth if needed.
