  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 lb Andouille sausage, sliced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the macaroni noodles according to the package instructions. Once done, drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the flour, whisking until smooth, and cook for about 1 minute.
  3. Gradually pour in the heavy cream and milk, whisking continuously to thicken the mixture.
  4. Stir in the shredded cheddar and mozzarella cheese, mixing until melted and smooth.
  5. Add the Cajun seasoning, salt, pepper, and sliced Andouille sausage, mixing well.
  6. Combine the cheese sauce with the cooked macaroni, ensuring even coating.
  7. Transfer to a baking dish and optionally top with extra cheese. Bake in a preheated oven at 350°F (175°C) for about 20 minutes until bubbly and golden.
  8. Before serving, garnish with chopped green onions.
