- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup heavy cream
- 1/2 cup milk
- 1/2 lb Andouille sausage, sliced
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook the macaroni noodles according to the package instructions. Once done, drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the flour, whisking until smooth, and cook for about 1 minute.
- Gradually pour in the heavy cream and milk, whisking continuously to thicken the mixture.
- Stir in the shredded cheddar and mozzarella cheese, mixing until melted and smooth.
- Add the Cajun seasoning, salt, pepper, and sliced Andouille sausage, mixing well.
- Combine the cheese sauce with the cooked macaroni, ensuring even coating.
- Transfer to a baking dish and optionally top with extra cheese. Bake in a preheated oven at 350°F (175°C) for about 20 minutes until bubbly and golden.
- Before serving, garnish with chopped green onions.
