Description

A hearty and flavorful Cajun dish made with smoked sausage, rice, and vegetables, perfect for a family meal.


Ingredients

  • 2 cups long-grain rice
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Optional: green onions for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the sliced smoked sausage and cook until browned, stirring occasionally.
  2. Once the sausage is browned, add the chopped onion, green bell pepper, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the long-grain rice and Cajun seasoning. Mix well to coat the rice with oil and spices.
  4. Pour in the chicken broth and add salt and pepper to taste. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is tender and has absorbed all the liquid.
  6. When the rice is done, fluff it with a fork. If desired, garnish with chopped green onions and serve hot.

Notes

For best results, do not skip the browning step for the sausage.
