A hearty and flavorful Cajun dish made with smoked sausage, rice, and vegetables, perfect for a family meal.

- 2 cups long-grain rice
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Optional: green onions for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the sliced smoked sausage and cook until browned, stirring occasionally.
- Once the sausage is browned, add the chopped onion, green bell pepper, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Stir in the long-grain rice and Cajun seasoning. Mix well to coat the rice with oil and spices.
- Pour in the chicken broth and add salt and pepper to taste. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is tender and has absorbed all the liquid.
- When the rice is done, fluff it with a fork. If desired, garnish with chopped green onions and serve hot.
Notes
For best results, do not skip the browning step for the sausage.
