Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1 teaspoon vanilla extract

  3. Cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy (3-5 minutes).
  4. Add the vanilla extract and mix until incorporated.
  5. Gradually add the all-purpose flour and salt, mixing on low speed until just combined.
  6. Fold in the finely chopped pecans with a spatula.
  7. Roll small portions of dough into 1-inch balls and place them on the prepared baking sheet, 2 inches apart.
  8. Bake for 15-20 minutes until the bottoms are lightly golden.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  10. Roll cooled cookies in extra powdered sugar to coat.

Notes

For a cozier flavor, pair these cookies with coffee, tea, or hot chocolate.
