- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1 cup powdered sugar, plus extra for dusting
- 1 cup toasted pecans, finely chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix well.
- Gradually add in the flour and salt, mixing until just combined.
- Fold in the chopped toasted pecans.
- Roll the dough into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
- Bake for 15-18 minutes or until the edges are lightly golden.
- Remove from the oven and let them cool slightly, then roll the cookies in powdered sugar while they’re still warm.
- Allow cookies to cool completely and dust again with powdered sugar before serving.
Notes
Store cookies in an airtight container for up to one week. For longer storage, freeze for up to three months.
