Description

This comforting dish combines savory caramelized onions with fluffy rice, making it a perfect side or main course.

Ingredients

Scale
  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 2 medium onions, thinly sliced
  • 3 tablespoons butter or olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Melt the butter over medium heat in a skillet. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally.
  2. Bring the broth to a boil in a pot. Add the rice along with a pinch of salt. Cover the pot and reduce heat, cooking for 15-20 minutes or until the rice is tender.
  3. Fluff the rice with a fork once done. Stir in the caramelized onions and season with pepper. Adjust the salt if needed.
  4. Serve warm, garnished with fresh parsley if desired.

Notes

For best flavor, avoid rushing the caramelization of the onions and use the right type of rice.
