Ingredients
Scale
- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 2 medium onions, thinly sliced
- 3 tablespoons butter or olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Melt the butter over medium heat in a skillet. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally.
- Bring the broth to a boil in a pot. Add the rice along with a pinch of salt. Cover the pot and reduce heat, cooking for 15-20 minutes or until the rice is tender.
- Fluff the rice with a fork once done. Stir in the caramelized onions and season with pepper. Adjust the salt if needed.
- Serve warm, garnished with fresh parsley if desired.
Notes
For best flavor, avoid rushing the caramelization of the onions and use the right type of rice.
