Ingredients

  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 2 lemons
  • Zest of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, pepper, lemon juice, and lemon zest to create a marinade.
  3. Rub the marinade all over the butterflied chicken, ensuring it is well coated.
  4. Let it marinate for at least 30 minutes.
  5. Place the chicken skin-side down on the grill and cook for 20-25 minutes.
  6. Flip and grill for an additional 15-20 minutes or until the internal temperature reaches 165°F (75°C).
  7. Remove from the grill and let rest for a few minutes.
  8. Garnish with fresh parsley and serve.
