- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 2 lemons
- Zest of 1 lemon
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, pepper, lemon juice, and lemon zest to create a marinade.
- Rub the marinade all over the butterflied chicken, ensuring it is well coated.
- Let it marinate for at least 30 minutes.
- Place the chicken skin-side down on the grill and cook for 20-25 minutes.
- Flip and grill for an additional 15-20 minutes or until the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for a few minutes.
- Garnish with fresh parsley and serve.
