Description

A delicious buffalo chicken-stuffed spaghetti squash that combines spicy flavors with a hearty texture.


Ingredients

  • 1 medium spaghetti squash
  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup cream cheese, softened
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Place the halves cut side down on a baking sheet and bake for 30-40 minutes, or until fork-tender.
  4. Combine the shredded chicken, buffalo sauce, cream cheese, half of the cheese, green onions, salt, and pepper in a mixing bowl.
  5. Scrape the insides of the cooked squash with a fork to create spaghetti-like strands.
  6. Mix the spaghetti strands with the buffalo chicken mixture and fill the squash halves with the mixture.
  7. Top with the remaining cheese.
  8. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Serve warm and enjoy!

Notes

Leave some room in the squash for the mixture to expand while cooking to prevent spillage.
