Description
A delicious buffalo chicken-stuffed spaghetti squash that combines spicy flavors with a hearty texture.

- 1 medium spaghetti squash
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup cream cheese, softened
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Place the halves cut side down on a baking sheet and bake for 30-40 minutes, or until fork-tender.
- Combine the shredded chicken, buffalo sauce, cream cheese, half of the cheese, green onions, salt, and pepper in a mixing bowl.
- Scrape the insides of the cooked squash with a fork to create spaghetti-like strands.
- Mix the spaghetti strands with the buffalo chicken mixture and fill the squash halves with the mixture.
- Top with the remaining cheese.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
Leave some room in the squash for the mixture to expand while cooking to prevent spillage.
