- 4 large bell peppers
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1/2 cup cream cheese, softened
- 1/2 cup shredded cheese (e.g., cheddar or mozzarella)
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the shredded cheese, and green onions. Mix everything until well combined.
- Season the mixture with salt and pepper to taste.
- Stuff each bell pepper with the buffalo chicken mixture.
- Place the stuffed peppers in a baking dish and sprinkle the remaining cheese on top.
- Cover the dish with foil and bake for 25-30 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and the peppers are tender.
- Serve warm and enjoy!
