Description

A delightful blend of spicy buffalo chicken, fresh veggies, and creamy dressing, this protein bowl is a complete meal that offers protein, carbs, and healthy fats.


Ingredients

  • 1 pound Boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup Hot sauce (Frank’s RedHot)
  • 1/4 cup Unsalted butter, melted
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 cups Cooked rice
  • 1 cup Shredded lettuce or mixed greens
  • 1/2 cup Dairy-free ranch dressing or standard ranch
  • 1/4 cup Shredded cheddar or dairy-free cheese
  • 1/2 cup Sliced cucumber or red bell peppers

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Season chicken pieces with salt and pepper, then toss them with olive oil to ensure they are coated evenly.
  3. Arrange the seasoned chicken on the baking sheet and roast for 8-10 minutes until the pieces are golden brown.
  4. While the chicken is roasting, melt butter in a skillet over medium heat.
  5. Add the hot sauce to the melted butter and simmer gently for about 2 minutes to thicken the sauce.
  6. Once the chicken is roasted, toss it in the buffalo sauce until each piece is well coated.
  7. Assemble the bowls by starting with a base of cooked rice, then add the hot chicken, followed by lettuce, cucumbers, cheese, and a drizzle of ranch dressing on top.

Notes

For a low-carb option, swap cooked rice with cauliflower rice. Adjust the spice level by adding more or less hot sauce.
