- 1 pound Boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup Hot sauce (Frank’s RedHot)
- 1/4 cup Unsalted butter, melted
- 2 tablespoons Olive oil
- 1/2 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2 cups Cooked rice
- 1 cup Shredded lettuce or mixed greens
- 1/2 cup Dairy-free ranch dressing or standard ranch
- 1/4 cup Shredded cheddar or dairy-free cheese
- 1/2 cup Sliced cucumber or red bell peppers
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Season chicken pieces with salt and pepper, then toss them with olive oil to ensure they are coated evenly.
- Arrange the seasoned chicken on the baking sheet and roast for 8-10 minutes until the pieces are golden brown.
- While the chicken is roasting, melt butter in a skillet over medium heat.
- Add the hot sauce to the melted butter and simmer gently for about 2 minutes to thicken the sauce.
- Once the chicken is roasted, toss it in the buffalo sauce until each piece is well coated.
- Assemble the bowls by starting with a base of cooked rice, then add the hot chicken, followed by lettuce, cucumbers, cheese, and a drizzle of ranch dressing on top.
Notes
For a low-carb option, swap cooked rice with cauliflower rice. Adjust the spice level by adding more or less hot sauce.
