- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup cooked quinoa or rice
- 1 cup corn, cooked
- 1 cup black beans, drained and rinsed
- 1 avocado, diced
- 1/2 cup Greek yogurt or sour cream
- Chopped green onions for garnish
- Salt and pepper to taste
Instructions
- In a pan, heat the shredded chicken with buffalo sauce until warmed through.
- In serving bowls, layer cooked quinoa or rice as the base.
- Top with buffalo chicken, corn, black beans, and diced avocado.
- Add a dollop of Greek yogurt or sour cream on top.
- Garnish with chopped green onions, and season with salt and pepper to taste.
- Serve immediately and enjoy!
