Description

Delicious and nutritious Buffalo Chicken Bowls combining spicy buffalo chicken, quinoa or rice, and fresh toppings for a satisfying meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1 cup cooked quinoa or rice
  • 1 cup corn, cooked
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 1/2 cup Greek yogurt or sour cream
  • Chopped green onions for garnish
  • Salt and pepper to taste

Instructions

  1. In a pan, heat the shredded chicken with buffalo sauce until warmed through.
  2. In serving bowls, layer cooked quinoa or rice as the base.
  3. Top with buffalo chicken, corn, black beans, and diced avocado.
  4. Add a dollop of Greek yogurt or sour cream on top.
  5. Garnish with chopped green onions, and season with salt and pepper to taste.
  6. Serve immediately and enjoy!
