Description

A delicious and satisfying dish combining spicy buffalo chicken, fresh greens, and creamy blue cheese, perfect for lunch, dinner, or meal prep.


Ingredients

  • 2 grilled chicken breasts, sliced
  • 1/2 cup buffalo sauce
  • 4 cups fresh greens (e.g., spinach, arugula)
  • 1/2 cup creamy blue cheese crumbles
  • 1 avocado, sliced (optional)
  • 1/2 cup cherry tomatoes, halved (optional)
  • Salt and pepper to taste
  • Olive oil (for drizzling, optional)

Instructions

  1. Start by grilling the chicken breasts until cooked through. Check to make sure the internal temperature reaches 165°F (75°C). Once done, slice them into strips.
  2. In a large bowl, toss the fresh greens with a drizzle of olive oil, and add salt and pepper to taste.
  3. Layer the greens at the bottom of a large bowl.
  4. Add the sliced chicken on top of the greens, making sure it’s evenly spread.
  5. Drizzle the buffalo sauce over the chicken.
  6. Top your bowl with blue cheese crumbles.
  7. If desired, add sliced avocado and halved cherry tomatoes on top.
  8. Serve immediately and enjoy!
