A delicious twist on the classic grilled cheese, featuring warm mozzarella and fresh bruschetta.
Ingredients

- 2 slices of bread
- 2 slices of mozzarella cheese
- 1 medium tomato, diced
- 1 clove garlic, minced
- Fresh basil leaves, chopped
- Olive oil
- Salt and pepper to taste
Instructions
- Combine diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper in a bowl to make a bruschetta mixture.
- Heat a skillet over medium heat and add a little olive oil.
- Place one slice of bread in the skillet and layer one slice of mozzarella cheese on top.
- Spoon some bruschetta mixture over the cheese, then place another slice of mozzarella on top.
- Top with the second slice of bread.
- Cook until the bottom is golden brown, then flip and cook the other side until golden and cheese is melted.
- Remove from skillet, slice in half, and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat on a skillet or toaster oven.
