Ingredients

  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (any color)
  • 1 cup diced onions
  • 1 pound breakfast sausage (or turkey sausage)
  • 1 loaf of crusty bread, cut into cubes
  • Fresh herbs (like parsley or chives) for garnish, optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the breakfast sausage over medium heat until fully browned. Break it into small pieces as it cooks. Once done, drain excess grease and set aside.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. In a large baking dish, layer the bread cubes, cooked sausage, bell peppers, onions, and half of the cheese.
  5. Pour the egg mixture evenly over the layers in the baking dish. Gently push down the bread so it absorbs the egg mixture.
  6. Top with remaining cheese and cover the dish with foil.
  7. Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the top is golden and set.
  8. Garnish with fresh herbs, if using. Serve warm.

Notes

Allow the dish to cool completely before storing leftovers in an airtight container. It can be refrigerated for up to 3 days or frozen for longer storage.
