- 12 large eggs
- 1 cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (any color)
- 1 cup diced onions
- 1 pound breakfast sausage (or turkey sausage)
- 1 loaf of crusty bread, cut into cubes
- Fresh herbs (like parsley or chives) for garnish, optional
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the breakfast sausage over medium heat until fully browned. Break it into small pieces as it cooks. Once done, drain excess grease and set aside.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- In a large baking dish, layer the bread cubes, cooked sausage, bell peppers, onions, and half of the cheese.
- Pour the egg mixture evenly over the layers in the baking dish. Gently push down the bread so it absorbs the egg mixture.
- Top with remaining cheese and cover the dish with foil.
- Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the top is golden and set.
- Garnish with fresh herbs, if using. Serve warm.
Notes
Allow the dish to cool completely before storing leftovers in an airtight container. It can be refrigerated for up to 3 days or frozen for longer storage.
