- 2 cups warm water
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/4 cup brown sugar
- 1 teaspoon salt
- 4–5 cups all-purpose flour
- 2 tablespoons cinnamon
- 1/4 cup granulated sugar
- 1 egg (for egg wash)
- 1 tablespoon butter (for brushing)
Instructions
- Activate the yeast: In a large bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
- Add sweetness and flavor: Stir in the brown sugar and salt.
- Mix the dough: Gradually add flour to the mixture, mixing until a dough forms. Knead the dough for about 10 minutes until it becomes smooth and elastic.
- Let it rise: Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for approximately 60 minutes, or until it has doubled in size.
- Preheat the oven: While the dough is rising, preheat your oven to 425°F (220°C).
- Shape the bagels: After the dough has risen, punch it down and divide it into 8 pieces, shaping each piece into a bagel.
- Boil the bagels: Bring a large pot of water to a gentle boil and boil each bagel for 1-2 minutes.
- Prepare the topping: Mix together cinnamon and granulated sugar and sprinkle over the bagels.
- Egg wash and bake: Brush bagels with egg wash and bake in the preheated oven for about 20-25 minutes, or until golden brown.
Notes
Ensure the water is warm but not hot when activating the yeast. Knead well for a smooth dough and don’t skip the boiling step.
