Instructions
- Preheat your oven to 350°F (175°C).
- Melt the unsalted butter in a saucepan over medium heat, stirring until it turns golden brown and gives off a nutty aroma. Let cool slightly.
- In a large bowl, combine the cooled brown butter, brown sugar, and granulated sugar. Mix until smooth.
- Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, salt, cinnamon, cardamom, ginger, and cloves until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Scoop tablespoon-sized portions of the dough onto a parchment-lined baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes until the edges are lightly golden. Monitor them closely as baking times can vary.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
