Description

A comforting and nutritious soup that combines earthy broccoli with rich Stilton cheese, perfect for cold days.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 medium potato, peeled and diced
  • 4 cups vegetable broth (or chicken broth)
  • 1 large head of broccoli, chopped into florets
  • ½ cup Stilton cheese, crumbled (adjust to taste)
  • 1 cup whole milk or cream (optional)
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing for about 5-7 minutes until the onion softens and becomes translucent.
  3. Stir in the diced potato and cook for an additional 3-4 minutes, stirring occasionally.
  4. Add the chopped broccoli florets and stir well to mix.
  5. Pour in the vegetable broth and bring to a boil, then reduce heat and simmer for 15-20 minutes, until broccoli and potato are tender.
  6. Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
  7. Return the soup to low heat, stir in the crumbled Stilton cheese, and add whole milk or cream if desired. Stir until cheese melts.
  8. Taste and season with salt and pepper as needed.
  9. Serve hot, garnished with parsley or chives if desired.

Notes

For added flavors, consider including spices or other vegetables. This soup can be frozen for up to 3 months.
