Ingredients

Scale
  • 2 cups broccoli florets
  • 2 cups diced potatoes
  • 1 onion, chopped
  • 3 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Incorporate the diced potatoes and pour in the vegetable broth. Bring to a boil.
  4. Once boiling, reduce heat and simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the broccoli and cook for an additional 5 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in the heavy cream or coconut milk. Season with salt and pepper, and heat through.

Notes

Avoid overcooking the broccoli for the best texture. Use fresh ingredients for optimal flavor.
