Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent.
- Incorporate the diced potatoes and pour in the vegetable broth. Bring to a boil.
- Once boiling, reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the broccoli and cook for an additional 5 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream or coconut milk. Season with salt and pepper, and heat through.
- Serve hot, topped with grated cheese if desired.
