- 3 cups finely chopped fresh broccoli florets (packed)
- 10 ounces (2.5 cups) sharp or extra sharp cheddar cheese, plus extra for serving
- 1 can (14.5 ounces) low-sodium chicken broth
- 3.75 cups low-fat milk, with extra as needed to thin
- 0.5 cup heavy cream
- 1 ounce (0.33 cup) finely shredded Parmesan cheese
- 6 tablespoons butter, cut into 1-tablespoon pieces
- 1 cup finely chopped yellow onion
- 1 large garlic clove, finely minced
- 0.25 cup + 3 tablespoons all-purpose flour
- Salt and freshly ground black pepper, to taste
Instructions
- Heat butter in a large pot over medium-high heat. Add chopped onions and sauté for 4-5 minutes until translucent.
- Stir in minced garlic and all-purpose flour, mixing well and cooking for about a minute.
- Gradually whisk in low-fat milk until smooth.
- Add chicken broth and chopped broccoli, stirring continuously as the mixture heats up.
- Once thickened, reduce heat and let it simmer for 6-8 minutes, stirring frequently.
- Remove from heat and stir in heavy cream, cheddar cheese, and Parmesan cheese until melted and creamy.
- Season with salt and pepper, then serve hot with extra cheddar cheese if desired.
Notes
Use fresh broccoli for the best flavor and texture. Adjust seasoning according to taste.
