Ingredients

  • 2 cups whole milk
  • 3 cups fresh broccoli florets, chopped small
  • 1 cup matchstick carrots or grated carrots
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup heavy cream (optional for extra richness)

Instructions

  1. Melt the butter in a large pot over medium heat (1-2 minutes).
  2. Add chopped onion and cook until softened (3-4 minutes).
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Sprinkle flour over the onion mixture, stirring constantly (1-2 minutes).
  5. Gradually whisk in chicken broth and whole milk, ensuring a smooth mixture.
  6. Add broccoli and carrots, bring to a simmer, and cook until tender (15-20 minutes).
  7. Reduce heat, stir in cheddar and Parmesan until melted, and season with salt, black pepper, and nutmeg.
  8. Use an immersion blender to partially blend the soup to a creamy consistency.
  9. If desired, stir in heavy cream and heat through.
  10. Serve in bowls and enjoy!
