- 2 cups sharp cheddar cheese, shredded

- 1/4 teaspoon ground nutmeg (optional)
- 1/2 cup heavy cream (optional for extra richness)
Instructions
- Melt the butter in a large pot over medium heat (1-2 minutes).
- Add chopped onion and cook until softened (3-4 minutes).
- Stir in minced garlic and cook for an additional 30 seconds.
- Sprinkle flour over the onion mixture, stirring constantly (1-2 minutes).
- Gradually whisk in chicken broth and whole milk, ensuring a smooth mixture.
- Add broccoli and carrots, bring to a simmer, and cook until tender (15-20 minutes).
- Reduce heat, stir in cheddar and Parmesan until melted, and season with salt, black pepper, and nutmeg.
- Use an immersion blender to partially blend the soup to a creamy consistency.
- If desired, stir in heavy cream and heat through.
- Serve in bowls and enjoy!
