- 2 cups shredded sharp cheddar cheese

Instructions
- Prepare your ingredients: Wash the broccoli thoroughly and cut it into small florets. Dice the onion and mince the garlic.
- Sauté the aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, sauté until translucent, about 5 minutes.
- Cook the broccoli: Add the broccoli florets and broth to the pot. Bring to a simmer and cook for about 10 minutes until the broccoli is tender.
- Blend the soup: Use an immersion blender or transfer the mixture to a regular blender in batches and blend until smooth, leaving some chunky bits for texture.
- Add cheese and cream: Return the blended soup to low heat, stir in the cheddar cheese until melted, then add the heavy cream. Season with salt and pepper to taste.
- Serve: Serve hot, garnished with extra cheese or croutons if desired, preferably with crusty bread.
