Description

Ingredients

  • 2 heads of broccoli, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the broccoli is tender.
  3. Use an immersion blender to puree the soup until smooth, or leave some chunks for texture.
  4. Stir in the milk and cheddar cheese until melted and well combined.
