- 2 heads of broccoli, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.
- Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the broccoli is tender.
- Use an immersion blender to puree the soup until smooth, or leave some chunks for texture.
- Stir in the milk and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste.
- Serve warm.

Avoid overcooking the broccoli and boiling the soup after adding cheese to maintain a creamy texture.
