- 4 cups fresh broccoli florets (or frozen, thawed and drained)
- ½ medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 (10.5 oz) can condensed cream of mushroom or cream of chicken soup
- ½ cup sour cream
- ½ cup mayonnaise
- 1 ½ cups shredded cheddar cheese, divided
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- ½ teaspoon paprika (optional)
- ½ cup crushed Ritz crackers or breadcrumbs
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch or similar-sized baking dish.
- Steam or blanch the broccoli florets until just crisp-tender, about 2–3 minutes. Drain well and set aside.
- In a skillet, heat olive oil over medium heat. Sauté the chopped onion for about 3–4 minutes until softened, then add minced garlic and sauté for an additional 30 seconds.
- In a large mixing bowl, combine the cream of mushroom (or chicken) soup, sour cream, mayonnaise, sautéed onion and garlic, 1 cup of shredded cheddar cheese, salt, pepper, and paprika if using. Stir well to blend.
- Fold the cooked broccoli into the creamy mixture until evenly coated.
- Transfer the mixture into the prepared baking dish and sprinkle the remaining ½ cup of cheddar cheese on top.
- In a small bowl, mix the crushed Ritz crackers or breadcrumbs with melted butter and sprinkle over the cheese layer.
- Bake uncovered for 25–30 minutes until bubbly and golden brown. Let rest for 5 minutes before serving.
Notes
For best results, don’t overcook the broccoli. You can customize the recipe by adding other vegetables or proteins.
