Description

A creamy and cheesy casserole featuring nutritious broccoli, perfect for any occasion.


Ingredients

  • 4 cups fresh broccoli florets (or frozen, thawed and drained)
  • ½ medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 (10.5 oz) can condensed cream of mushroom or cream of chicken soup
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 ½ cups shredded cheddar cheese, divided
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ teaspoon paprika (optional)
  • ½ cup crushed Ritz crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch or similar-sized baking dish.
  2. Steam or blanch the broccoli florets until just crisp-tender, about 2–3 minutes. Drain well and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté the chopped onion for about 3–4 minutes until softened, then add minced garlic and sauté for an additional 30 seconds.
  4. In a large mixing bowl, combine the cream of mushroom (or chicken) soup, sour cream, mayonnaise, sautéed onion and garlic, 1 cup of shredded cheddar cheese, salt, pepper, and paprika if using. Stir well to blend.
  5. Fold the cooked broccoli into the creamy mixture until evenly coated.
  6. Transfer the mixture into the prepared baking dish and sprinkle the remaining ½ cup of cheddar cheese on top.
  7. In a small bowl, mix the crushed Ritz crackers or breadcrumbs with melted butter and sprinkle over the cheese layer.
  8. Bake uncovered for 25–30 minutes until bubbly and golden brown. Let rest for 5 minutes before serving.

Notes

For best results, don’t overcook the broccoli. You can customize the recipe by adding other vegetables or proteins.
