Description

A comforting and delicious soup combining fresh broccoli and rich cheddar cheese, perfect for a warm meal or as a side.


Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (or cream)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onions are translucent, about 5 minutes.
  2. Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat to a simmer and cook until broccoli is tender, about 10 minutes.
  3. Use an immersion blender to blend the soup until smooth, or transfer in batches to a traditional blender.
  4. Return the blended soup to the pot and stir in milk and shredded cheddar cheese. Continue stirring until cheese melts and is well combined.
  5. Season with salt and pepper to taste. Serve hot and enjoy!

Notes
