A comforting and delicious soup combining fresh broccoli and rich cheddar cheese, perfect for a warm meal or as a side.
Ingredients

- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or cream)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onions are translucent, about 5 minutes.
- Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat to a simmer and cook until broccoli is tender, about 10 minutes.
- Use an immersion blender to blend the soup until smooth, or transfer in batches to a traditional blender.
- Return the blended soup to the pot and stir in milk and shredded cheddar cheese. Continue stirring until cheese melts and is well combined.
- Season with salt and pepper to taste. Serve hot and enjoy!

Adjust seasonings according to your preference. Use fresh cheese for best melting results.
