- 4 cups broccoli florets

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
- Stir in the broccoli florets and pour in the broth. Bring the mixture to a boil.
- Reduce the heat and simmer for about 15 minutes, or until the broccoli is tender.
- Using an immersion blender or a regular blender, blend the soup until smooth.
- Return the soup to heat and stir in the cheddar cheese and heavy cream. Allow it to heat through.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with additional cheddar cheese if desired.
