- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
- Stir in the broccoli florets and vegetable broth. Bring to a simmer.
- Allow the soup to cook for about 10 minutes or until the broccoli is tender.
- Reduce the heat, then stir in the heavy cream and shredded cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- If desired, use an immersion blender to achieve a smoother texture.
- Ladle the hot soup into bowls and enjoy!
