Description

A creamy and comforting broccoli cheddar soup, perfect for chilly days that combines the rich flavors of cheese and healthy broccoli.


Ingredients

  • 1/4 cup butter
  • 1/2 cup diced white onions
  • 1 cup chopped baby carrots
  • 3 cups chopped broccoli florets
  • 1½ cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Pinch of crushed red pepper flakes
  • 2 cups shredded cheddar cheese

Instructions

  1. Melt the butter in a large soup pot over medium-high heat.
  2. Add the diced onions, chopped carrots, and chopped broccoli to the pot, stirring well. Cook for 4-5 minutes until the vegetables begin to soften.
  3. Reduce heat to medium and pour in the chicken broth, milk, and heavy cream. Stir well.
  4. Sprinkle in the all-purpose flour, sea salt, black pepper, and crushed red pepper flakes. Stir and cook for about 10 minutes until the soup thickens.
  5. Finally, mix in the shredded cheddar cheese until fully melted and incorporated.
  6. Once smooth and creamy, ladle the soup into bowls and serve immediately.

Notes

To store leftovers, place cooled soup in an airtight container and refrigerate for up to 4 days or freeze for up to 3 months.
