- 1/4 cup butter
- 1/2 cup diced white onions
- 1 cup chopped baby carrots
- 3 cups chopped broccoli florets
- 1½ cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- Pinch of crushed red pepper flakes
- 2 cups shredded cheddar cheese
Instructions
- Melt the butter in a large soup pot over medium-high heat.
- Add the diced onions, chopped carrots, and chopped broccoli to the pot, stirring well. Cook for 4-5 minutes until the vegetables begin to soften.
- Reduce heat to medium and pour in the chicken broth, milk, and heavy cream. Stir well.
- Sprinkle in the all-purpose flour, sea salt, black pepper, and crushed red pepper flakes. Stir and cook for about 10 minutes until the soup thickens.
- Finally, mix in the shredded cheddar cheese until fully melted and incorporated.
- Once smooth and creamy, ladle the soup into bowls and serve immediately.
Notes
To store leftovers, place cooled soup in an airtight container and refrigerate for up to 4 days or freeze for up to 3 months.
