Description

A creamy and comforting soup that combines the rich flavors of cheddar cheese with healthy broccoli, perfect for chilly days.


Ingredients

  • 4 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • ¼ cup flour
  • 2 cups milk
  • 2 cups chicken broth
  • 4 cups chopped broccoli florets
  • 2 cups cheddar cheese
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook for 5-6 minutes until softened and fragrant.
  3. Stir in the flour to help thicken the soup.
  4. Gradually pour in the milk, whisking constantly to avoid lumps.
  5. Add the chicken broth and chopped broccoli florets.
  6. Bring to a boil, then reduce the heat to a simmer.
  7. Cook for 8-10 minutes until the broccoli is tender.
  8. Stir in the cheddar cheese and heavy cream.
  9. Taste and season with salt and pepper as needed.
