Description

A warm and comforting Broccoli Cheddar Soup that blends creamy textures with the nutritious goodness of broccoli and sharp cheddar.


Ingredients

  • 2 cups broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup vegetable or chicken broth
  • 1 cup milk
  • 1 small onion, chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the flour and cook for about 1 minute to create a roux.
  3. Gradually whisk in the broth and milk until smooth.
  4. Add the broccoli florets and simmer until tender, about 10 minutes.
  5. Use an immersion blender to puree the soup to your desired consistency.
  6. Stir in the cheddar cheese until melted, and season with salt and pepper to taste.
  7. Serve warm.

Notes

Don’t overcook the broccoli and use fresh cheese for better texture.
