- 2 cups broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 1 cup vegetable or chicken broth
- 1 cup milk
- 1 small onion, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the flour and cook for about 1 minute to create a roux.
- Gradually whisk in the broth and milk until smooth.
- Add the broccoli florets and simmer until tender, about 10 minutes.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in the cheddar cheese until melted, and season with salt and pepper to taste.
- Serve warm.
Notes
Don’t overcook the broccoli and use fresh cheese for better texture.
