Description
Classic British sausage rolls filled with savory sausage meat, cheddar cheese, and fresh thyme, all wrapped in flaky pastry.

- 225g sausage meat
- 50g mature cheddar cheese, grated
- 2 teaspoons fresh thyme leaves
- 1 egg, beaten
- 350g sheet rolled puff pastry (25x48cm)
- Salt and pepper to taste
- 2 tablespoons flour for dusting
Instructions
- Preheat your oven to 200°C (180°C fan/gas 6) and line a baking sheet with parchment paper.
- In a bowl, mix the sausage meat, grated cheddar cheese, and thyme leaves. Season with salt and pepper.
- Roll out the puff pastry to 25x48cm and cut into 6 equal rectangles (approximately 8x25cm each).
- Shape the sausage mixture into long sausages and place one along each pastry rectangle, leaving a 1cm border.
- Brush the edges of the pastry with beaten egg, fold over the filling, and press the edges to seal, crimping with a fork if desired.
- Chill the rolls in the refrigerator for about 10 minutes.
- Cut each long roll into 5-6 pieces diagonally.
- Brush the tops with the remaining beaten egg and bake for 25-30 minutes or until golden brown and crispy.
Notes
For a spicy version, add chili flakes or diced jalapeños to the filling. You can also substitute sausage meat with finely chopped vegetables for a vegetarian option.
