Description

Classic British sausage rolls that are flaky on the outside and meaty on the inside, perfect for parties and snacks.


Ingredients

Scale
  • 225g sausage meat
  • 50g mature cheddar cheese, grated
  • 2 teaspoons fresh thyme leaves
  • 1 egg, beaten
  • 350g sheet rolled puff pastry (25x48cm)
  • Salt and pepper to taste
  • 2 tablespoons flour for dusting

Instructions

  1. Preheat your oven to 200°C (or 180°C for fan ovens/gas 6) and prepare a baking sheet lined with parchment paper.
  2. In a large bowl, mix the sausage meat, grated cheddar cheese, and thyme leaves. Season with salt and pepper.
  3. On a floured surface, roll out the puff pastry to 25x48cm and cut into 6 rectangles (8x25cm each).
  4. Divide the sausage mixture into 6 portions, shaping each into a long sausage.
  5. Place each sausage on a pastry rectangle, leaving a 1cm border around the edges.
  6. Brush pastry edges with beaten egg, fold over the filling, and press edges to seal, crimping with a fork.
  7. Chill the rolls in the refrigerator for about 10 minutes.
  8. Cut each roll into 5-6 pieces diagonally and brush with remaining egg.
  9. Bake for 25-30 minutes until golden brown and crispy.

Notes

For optimal results, handle the pastry gently and keep it chilled before baking.
