Description

A delightful grapefruit yogurt cake that marries the tartness of grapefruit with creamy yogurt, perfect for any time of the day.

Ingredients

Scale
  • 1 cup Greek Yogurt (can substitute with plain yogurt)
  • 1/2 cup Fresh Grapefruit Juice
  • 1/3 cup Vegetable Oil (coconut oil is a healthy alternative)
  • 3/4 cup Granulated Sugar (can be reduced or replaced with a sugar substitute)
  • 1 1/2 cups All-Purpose Flour (can substitute with almond flour for gluten-free)
  • 2 teaspoons Baking Powder (ensure it’s fresh)
  • 1/2 teaspoon Salt
  • 1 cup Powdered Sugar (adjust to taste)
  • 2 tablespoons Grapefruit Juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan or line it with parchment paper.
  3. Mix the Greek yogurt, fresh grapefruit juice, and vegetable oil in a large bowl until smooth.
  4. Gradually add the granulated sugar to the mixture, whisking until well combined.
  5. Mix the all-purpose flour, baking powder, and salt in another bowl until evenly distributed.
  6. Combine the dry ingredients with the wet mixture, stirring gently until just combined.
  7. Pour the batter into the prepared pan, smoothing the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  10. Mix the powdered sugar and 2 tablespoons of grapefruit juice for the glaze, adjusting the consistency as needed.
  11. Once cool, drizzle the glaze over the cake and let it set before slicing.
  12. Serve as a delightful treat for breakfast, dessert, or a snack!

Notes

Avoid overmixing the batter to keep the cake light and fluffy. Ensure that your baking powder is fresh.
