Description

Ingredients

  • 4 large eggs
  • 1 cup shredded cheese
  • 1 cup fresh veggies (like bell peppers, onions, and spinach)
  • 4 large tortillas
  • Oil for toasting
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the seasoned beef until browned.
  2. In another pan, scramble the eggs with salt and pepper.
  3. Lay a tortilla flat and layer with cooked beef, scrambled eggs, cheese, and fresh veggies.
  4. Fold in the sides of the tortilla and then roll it up into a wrap.
  5. Heat oil in a pan over medium heat and toast the wrap until golden and crisp on all sides, about 2-3 minutes per side.
