Ingredients

  • 1 lb ground breakfast sausage
  • 1 large yellow onion, chopped
  • 1 loaf sourdough or country-style bread, cut into 1-inch cubes
  • 2 cups shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg

Instructions

  1. In a large skillet over medium-high heat, cook the ground breakfast sausage, breaking it apart as it cooks until browned. Add the chopped onion and cook for another 5-7 minutes until softened. Drain excess grease.
  2. In a large bowl, mix together the cubed bread, cooked sausage, onion mixture, 1 1/2 cups of Gruyère cheese, and Parmesan cheese until well combined.
  3. Transfer the mixture into a greased 9×13-inch baking dish and spread into an even layer.
  4. In the same bowl, whisk together the eggs, whole milk, heavy cream, Dijon mustard, salt, pepper, and nutmeg until smooth.
  5. Pour the egg custard evenly over the bread mixture, gently pressing down to help the bread absorb the liquid.
  6. Sprinkle the remaining 1/2 cup of Gruyère cheese on top. Cover tightly and refrigerate for at least 8 hours or overnight.
  7. The next morning, remove from the refrigerator 30 minutes before baking. Preheat oven to 350°F (175°C). Uncover and bake for 50-60 minutes until puffed, golden brown, and set.
  8. Let it rest for 10 minutes before slicing. Garnish with fresh parsley and enjoy!
